A. Exploring the Culinary Landscape:

Kathiyawadi cuisine, celebrated for its bold and spicy dishes made from simple ingredients, offers a delightful culinary experience. The authentic Kathiyawadi thali , a true masterpiece, features a variety of appetizers, main courses, side dishes, and desserts. Unlike the slight sweetness often found in many Gujarati dishes, Kathiyawadi cuisine distinguishes itself by embracing robust spices like onion, garlic, and green chilies, imparting a fiery kick to its creations.

The charm of Kathiyawadi culinary traditions lies in the simplicity of its ingredients and the vibrant flavors they bring to the table. Each dish, whether an appetizer teasing the taste buds or a main course offering a burst of spiciness, tells a story of the region’s culinary heritage. This delightful journey through the Kathiyawadi thali is a testament to the rich tapestry of flavors, where the absence of sweetness is replaced by a bold and inviting use of spices, making every bite a unique and enjoyable experience.

B. A Culinary Tour:

1. ROTLA – Bajra-based Flatbread:

Rotla, a cherished and gluten-free flatbread, is a culinary icon deeply rooted in the Kathiawadi tradition. Originally, it embraced the rustic charm of being cooked over a cow-dung fire, infusing it with a distinct smoky flavor. The process has evolved in modern kitchens, with Rotla now expertly baked on a tava before receiving its final touch over an open flame.

The heartiness of Rotla lies not just in its ingredients but in its journey—a tale of adaptation to changing times while holding onto its cultural roots. Paired harmoniously with garlic chutney and ringan no olo, this flatbread encapsulates the essence of Kathiyawadi’s culinary heritage. The contrast of the contemporary baking process with the traditional smokiness mirrors the region’s ability to blend old and new, resulting in a culinary delight that transcends generations.

2. Baingan Bharta:

Baingan Bharta , a beloved traditional dish, unfolds with a delightful simplicity. Grilled brinjals, combined with onions, tomatoes, spices, and herbs, create a harmonious blend that delights the palate. The dish’s allure lies in its unique smoky undertones, a result of brinjals being expertly grilled over an open flame.

Known affectionately as “ringan no oro” in Gujarati, this culinary gem exemplifies the heart and soul of Kathiyawadi cuisine . The interplay of fresh ingredients and the distinctive smokiness from the grilling process showcase the region’s commitment to straightforward yet deeply flavorful dishes. Baingan Bharta is more than a recipe; it’s a celebration of simplicity and the rich, smoky essence that defines the culinary heritage of Kathiyawad.

3. Sev Tameta:

Sev Tameta, a delightful Kathiyawadi curry , is a harmonious blend of simplicity and flavor. The rich gravy, crafted by fully mashed tomatoes, provides a comforting base. Served hot, it pairs seamlessly with parathas or rotlas, offering a wholesome dining experience.

What elevates Sev Tameta is the addition of various sev types, like Bhavnagari sev or nylon sev, contributing to its unique texture. These crunchy elements not only add contrast but also showcase the ingenuity in Kathiyawadi cuisine, where even everyday ingredients are transformed into a flavorful delight.

This dish encapsulates the essence of Kathiyawadi comfort food—easy to prepare, satisfying to the taste buds, and a true reflection of the region’s culinary artistry. Sev Tameta is a perfect example of how simple ingredients can come together to create a dish that is both accessible and deeply enjoyable.

4. Lasaniya Bateta Sabji:

Lasaniya Bateta Sabji, a flavorful masterpiece in Kathiyawadi cuisine , unfolds with effortless charm. Potatoes, cooked alongside garlic, become the canvas for a symphony of spices that transform this dish into a burst of bold and rich flavors.

Panfried with precision, the amalgamation of spices and garlic infuses the potatoes, creating a dish that captures the essence of Kathiyawadi culinary artistry. Served sizzling hot, whether, with parathas or rotlas, this dish not only satisfies the palate but also encapsulates the heartiness and warmth deeply rooted in the region’s gastronomic

Traditions. Lasaniya Bateta Sabji stands as a flavorful journey through the simplicity of ingredients, where the magic lies in the careful balance of spices. It is a delightful representation of Kathiyawadi comfort food, where each bite tells a story of tradition and the bold flavors that make this cuisine truly distinctive.

Papad, a special part of Kathiyawadi meals, is a tasty and crunchy delight. Made from urad dal or moong dal and spiced up, it brings a spicy and delicious crunch to the main course. It’s not just a side dish; you can enjoy it as a quick and satisfying snack too. Papad is all about adding flavor and a crispy touch to your meals, making it a favorite in Kathiyawadi cooking.

6. Gulab Jamun:

Gulab Jamun, a sweet indulgence in Kathiyawadi traditions , is a delightful finale to the meal. Crafted as soft and tasty round balls, it embodies the sweetness that perfectly complements the earlier spicy dishes. Adhering to the Kathiyawadi custom of pairing spicy with a touch of sweetness, Gulab Jamun brings a comforting and joyous conclusion to the dining experience.

More than just a dessert, it’s a cherished part of Kathiyawadi culture, symbolizing the warmth and sweetness embedded in every meal. Each bite of these delectable round treats reminds us of the simple pleasures that bring satisfaction and contentment to the table, making Gulab Jamun a beloved and essential element in Kathiyawadi Gastronomy.

Kathol , an authentic dish in Kathiyawadi cuisine, blends various curry sabjis with kathol , featuring boiled moong that’s pan-fried for an added twist. This flavorful combination not only adds a unique touch to the cuisine but also creates a satisfying and hearty dish. In Every bite, Kathol represents the essence of Kathiyawadi comfort food—simple, flavorful, and a celebration of the diverse elements that make this cuisine special. It is perfect for how different ingredients come together to create a delicious and comforting Dish, showcasing the heart and soul of Kathiyawadi gastronomy.

8. Masala Chaas:

No Kathiyawadi feast is truly finished without a comforting glass of Masala Chaas . Created by churning curd and adding a mix of spices, salt, and ice cubes, it offers a refreshing and harmonizing conclusion to the meal. This simple yet essential addition to Kathiyawadi dining not only cools the palate but also balances the robust and spicy flavors encountered during the meal.

Masala Chaas is more than a beverage; it’s a tradition—a cool and flavorful tradition that marks the end of a Kathiyawadi meal. Its gentle, spiced refreshment provides a soothing contrast to the bold and hearty dishes enjoyed earlier, leaving a sense of contentment and completeness. In every sip, Masala Chaas embodies the essence of Kathiyawadi hospitality, offering a cool and delightful farewell to the flavorsome journey that is Kathiyawadi cuisine .

Unraveling the Richness of Kathiyawadi Thali at Kathiyawadi Kitchen

We got there right when they opened so we’re able to get seated right away. They have a small location, and with limited seating capacity due to covid, they are only able to safely serve a few groups at a time. Expect an hour wait otherwise!

The food was so fresh, hot, flavorful, and aesthetically pleasing! They’re currently doing unlimited thali’s (atleast for dinner service, not sure about lunch). A thali is basically a smorgasbord of small portions of variety of foods that all compliment each other. It is very filling to begin with, so I’d recommend going when you’re really hungry/haven’t eaten much throughout the day.

There are 3 thali options, Gujarati, Kathiyawadi, and Punjabi. All looked fantastic. I opted to get the kathiyawadi thali, and it was soooo good. My favorite things from it were the khadi (sweet yet tangy soup like thing), the burthu (savory, smoky, eggplant mash), and their bread which was a thick rotla, and a thinner rotli which had this chewy consistency I enjoyed. I wasn’t a fan of their khaman because I felt it was on the dry side (it’s a savory sponge cake like appetizer, and usually moist).

I would absolutely go back here, and try their other thali’s.

The Best Kathiyawadi Thali Experience

Saw the reviews and tried the kathiyawadi thali today. This was the best Kathiyawadi food I have had outside of India. Taste was extremely close to Indian style Kathiyawadi. Service was good as well. Definitely recommend to anyone missing an indian style thali.

A Worthwhile Journey From Jersey City

Had heard a lot about this experience and wanted to try it out badly but couldn’t do it since it’s situated far away from Jersey City. Finally managed to convince my friends for a visit and damn! I was amazed! We ordered both Gujarati and Kathiawadi thali. The Gujarati thali though was a lot on the sweeter side and not a big fan of it but it was worth having for once. The Kathiawadi thali was really worth the price. Be careful of the jug full of buttermilk kept in front of you, it’s just to limit your eating capability at their unlimited restaurant. I loved it so much that I managed to eat 4 chapati, 1 rotli, and khaman x3, while trying out all the vegetables from Gujarati and Kathiawadi thali’s! My personal favorite was baigan ka bhartha as I had it after a really long time!

The staff is really polite with the servers providing us food till we were finishing despite their kitchen closing down. Service provided was top notch! I’m really looking forward to visit this place again!

Authentic Indian Thali Delight

I’ve had the pleasure of dining at Kathiyawadi Kitchen multiple times with both friends and family, and I must say, they are unbeatable when it comes to thalis. I thoroughly enjoyed their Gujarati and Kathiyawadi thali on two separate occasions, and I can confidently say that their food is absolutely delicious.

It’s rare to find an authentic Indian thali in New Jersey, but Kathiyawadi Kitchen certainly delivers. The Sev ki sabji is a standout dish, and I highly recommend giving it a try. The staff is also incredibly friendly, and the service is fast, making for a seamless dining experience.

What’s even better about Kathiyawadi Kitchen is that it’s a pocket-friendly dining option, and the taste is unbeatable. The only downside is that the place is often crowded, so getting an early reservation is always suggested.

Overall, I would highly recommend Kathiyawadi Kitchen to anyone looking for a delicious and authentic Indian thali in New Jersey. The food is amazing, the staff is friendly, and the dining experience is unbeatable.

The typical Gujarati thali has so many dishes that you cannot resist yourself to finish it.

Origin of Kathiyawadi Cuisine

Kathiyawadi cuisine originated in coastal Gujarat. Kathiyawadi thali, or a feast, belongs to some particular regions in Gujarat. The Kathiyawad region, also known as Saurashtra, consists of cities like Porbandar, Jamnagar, Bhavnagar, Rajkot, and Junagadh. Kathiyawad has mostly dry and harsh weather, which means less vegetation. So, most dishes are made with potatoes, millets, tomatoes, and brinjal. Kathiyawadi food is made with simple Indian recipes. Farsan (a collection of desi snacks) is a dominant part of this cuisine and has become a part of Gujarati tradition.

Are you ready to dive into the world of Kathiyawadi food and want to try these simple Indian recipes?

Kathiyawadi recipes need namkeens or Indian snacks for preparation, and Bombay Kitchen brings you a variety of such namkeens which you can use in these dishes.

Sev tamatar nu shaak.

Sev tomato or sev tamatar nu shaak strikes the right savory notes. Usually prepared with sev cooked in spicy tomato curry, sev tomato is best eaten with Thepla or Bhakri. The sev in this dish gives it a crunchy texture. It is prepared during Paryushan Parva in Jain communities when consuming root vegetables is avoided.

You can use Bombay Kitchen’s Fine Sev to make sev tamatar nu shaak at home. Our Fine Sev is made with finely-processed chickpea flour and is well suited for this dish.

Peanut Chaat

Nothing beats freshly-served Peanut Chaat if you are looking for some yummy snack ideas. You can consider it one of the simple Indian recipes, and prepare this appetizer at home in less than 10 minutes. Just mix peanuts, spices, squeeze a lemon and garnish with your options for this dish. It will be tastier if you use Bombay Kitchen’s Spicy Peanuts or Peanut Bhujia. Peanuts with tangy and spicy taste can make you feel full for longer, and you can consider it a healthy chaat option.

Sev Khamani

One of the easiest Kathiyawadi recipes, Sev Khamani, is a popular dish during tea time. This dish will enhance your chai-time gupshup as nothing else can. The main ingredient of this simple Indian recipe is chana dal. It is prepared as regular dhokla and then garnished with Sev. If you want it to be more delightful, you can use Sev from Bombay Kitchen and immerse in its authentic flavor.

Kaju Karela

A royal dish, Kaju Karela is an interesting dish in Kathiyawadi cuisine. Bitter gourd is stir-fried until it becomes crunchy and its bitterness is gone. You can slice bitter gourd and toss it with jaggery, poppy seeds, cashews, and spices. If you don’t want to buy different spices used in this recipe, simply use Spicy Cashews from Bombay Kitchen to make Kaju Karela at home.

You can try these dishes to get the authentic experience of Kathiyawadi food at home. Above are mentioned some simple Indian recipes that you can prepare with easy-to-find ingredients in your local grocery shops.

We also offer some other delicious Indian snacks that can be had while preparing these dishes.

  • Black Pepper Gathia
  • Garlic Gathia
  • Papadi Gathia
  • Rajbhog Mix
  • Chewda Mix
  • Extra Hot Mix
  • Bikaneri Sev
  • Regular Sev

Our snacks are made with unadulterated ingredients in a hygienic facility. All our desi snacks have a standard shelf life so that you can enjoy them without worry.

Are you craving Kathiyawadi dishes? Well, you don’t need to travel all the way to India to taste it! Prepare it at home with Bombay Kitchen ‘s snack variety. Visit a Bombay Kitchen outlet or a nearby grocery store to buy your packets.

Taylor Swift 's Eras Tour stop in London  (round one) is wrapping up, but that isn't stopping celeb Swifties in the audience from shaking it off !

On Sunday, June 23, the 34-year-old "London Boy" crooner hit the stage for the third and final time at Wembley Stadium and welcomed another crop of big-name celebrities to the VIP tent, including a member of The Beatles, a Kansas City Chiefs player (can you guess which one?) and the "Queen of the North." The visits come after Swift performed her first two shows on Friday and Saturday, welcoming more than 160,000 fans between the two days -- including real royalty .

In attendance on Sunday was close friend Gracie Abrams -- who released a new song, "Us," with Swift on Friday -- as well as Paul McCartney, Jon Bon Jovi, Ellie Goulding and many, many more. Given Swift's connection to the U.K. capital -- she lived in London on and off with Joe Alwyn , her ex-boyfriend of six years -- it's no surprise just how many friends turned out over the course of the three-day show weekend.

Those who miss out on the first London leg (featuring  chicken tenders with seemingly ranch ) will have a chance to catch the Eras Tour at Wembley Stadium in August, when Swift returns for five more shows before she officially says "So Long, London" and heads back to the U.S. for tour dates in New Orleans, Miami and Indianapolis.

Until then, check out the full list of celebs below who made it to Swift's first Eras Tour stop in London.

William and the royal kiddos -- Prince George and 10, Princess Charlotte -- made an appearance at the show. The concert fell on William's 42nd birthday, who celebrated by dancing to Swift's hit "Shake It Off." As a special treat, Swift and her boyfriend,  Travis Kelce , who also attended the show, had a private meet and greet with the royals backstage.

Swift later went back to that same IG post and tagged Kelce, the first time she's done that.

Erin Andrews and Charissa Thompson

Swift is no stranger to big names in the crowd. In August, during her Eras Tour stop in Los Angeles , her VIP tent saw friend after friend enter, including Selena Gomez, Mindy Kaling, Charlize Theron, Emma Stone, Channing Tatum and Kevin Costner, among many others. Since then, her No. 1 VIP has been No. 87 on the Kansas City Chiefs, Travis Kelce , who Swift  began dating in late (not so cruel) summer  of last year.

In May, Kelce  attended Swift's 87th Eras Tour show , which just so happened to occur in the City of Love -- Paris, France. Coincidence or is she a mastermind ? Regardless, Kelce was accompanied by her close friends, Gigi Hadid and Bradley Cooper , while her mom,  Andrea Swift , and  Lenny Kravitz  were also in attendance.

After a two-month break from the end of February to early May, Swift resumed her record-breaking world tour in Nanterre, France, and has visited Sweden, Portugal and Scotland in the weeks since, making each show with unique surprise songs -- including the recently debuted " murder mashup " and " diss track mashup. "

Sadly, Swift recently used her 100th show to announce that the Eras Tour will officially conclude  in December as she finishes out the two-year spanning undertaking in Vancouver, Canada -- the hometown of her good friend, Ryan Reynolds , who we predict will absolutely be present.
