  • The Beginning of Peggy Jean’s Pies

SBS – Can you share the story of how your business journey began?

Rebecca – Ten years ago, my mom and I started a pie bakery (Peggy Jean’s Pies). It was actually a reboot of her business that was open from 1994 to 2004 — she’s the Jean, and her very best friend was named Peggy. They opened with $400 and a solid survey of calling numbers from the phone book to ask if the resident would ever consider purchasing pie from a storefront (which actually seems so crazy for those who have never lived in a pre-internet world!). My mom closed the business in 2004 because Peg was very ill. She helped Peg’s husband care for Peg for the next year, and Peg passed away on August 23, 2005.

During this whole time, I actually attended law school, graduated, and became an Assistant Attorney General for the State of Missouri. After Peg’s death, my mom married and moved about two hours away, and they just enjoyed retirement life. I practiced law, and my husband and I had two kids, so mom would come every week and spend Wednesday nights to see us all. People recognized her and asked her to make them pie in her house, and they would pay her. One day, she looked at me and said, “I don’t know… Why don’t we bake pies together?” And I thought that being a lawyer/pie baker was a genius idea. (Spoiler alert: This was really dumb… It would just take me a while to figure that out!).

  • Financing and Initial Capital

SBS – Starting a business often requires capital. How did you fund your business initially, and did you explore any unique financing options?

Rebecca – We started up our plan to reboot Peggy Jean’s Pies. We had a lot of wailing and gnashing of teeth about changing the name or keeping it, but we decided to keep it because we did a Kickstarter campaign for start-up money. We had no funds and no assets either of us held without our husbands, and we wanted to do this totally in our names. So we raised $10k on Kickstarter (also, not enough to start a business) and moved forward.

I didn’t bake pies and had no clue how to run a business. Mom had a ton of experience, but she is so creative that all the skills you need for the administrative side of a business fell on me. We had no clue what we were doing. We really had no money, but we had a lot of passion. We worked 90 hours a week that first year, we fought a ton, I quit my job and turned my life upside down, and we just plowed forth. Woof. The further we get from that time period, I realize more and more just how insane it all was and, honestly, just how brave we were.

Fast forward ten years, and we have two locations and do over $1 million in sales a year in just pie. My husband actually left his career in healthcare to be a full-time member of our company, and now my kids — who were so little when I blew apart our easy life to start this — both work here while they are in college. Mom is 70 and works around 20 hours a week. We are working on our third location, but, like so many, we are wary of the economy and inflation, so it is a slow progression.

We are the absolute best at what we do — we make pie completely from scratch using my mother’s, grandmother’s, and great-grandmother’s recipes. Nothing here comes from a bag or a box. We don’t offer any food other than pie. Our White Chocolate Strawberry pie has been named one of the best pies in America by Food Network, and our store was called one of the Best Pie Shops in America by Country Living magazine.

  • A Day in the Life of an Entrepreneur

SBS – As an entrepreneur, what does a typical day look like for you?

Rebecca – For my typical day, I still do literally everything here. I bake, wait on customers, answer emails, help brides plan their wedding orders, do all our food ordering, merchandising, and social media, and write a popular blog on entrepreneurship. I’m usually here from 7:30 to 4:30 in our non-peak season and then go home, try to get in a quick walk, cook dinner, then work on the blog and talk with my husband about orders and plans for the next day. When we say we are a small family business , we really mean it — we are all in conversation about what we do all the time. I think that’s pretty much the case for all small business families in America.

  • Early Stage Challenges

SBS – What were some of the biggest challenges you faced in the early stages of the business?

Rebecca – We had two significant challenges in the beginning. Obviously, money is a struggle for most. We didn’t really have any resources and could only get a loan if our husbands co-signed, and we were really intent on doing this ourselves. So we raised $10k from Kickstarter, and short of that, we just didn’t get it if we didn’t have cash. For example, we were open for almost a year without an exterior sign because we couldn’t afford one. That’s a rough way to start. Our other challenge was just the learning curve. Being a lawyer doesn’t qualify you to own a retail bakery . I had so much to learn and to teach myself. I could have never guessed in a million years all the skills I would need to develop to be successful.

  • Valuable Lessons Learned

SBS – Through starting the business, have you learned anything particularly helpful or advantageous?

Rebecca – I have learned so much! Most importantly, I’ve learned that I can literally do anything… Or I can at least put a heck of an effort into figuring out what I need to know. I learned that I’m someone who can work extremely hard and not give up — I’m not sure if I believed that before I started my business. We would start working early in the morning when it was dark out and leave in the evening when it was dark, and I would literally be inside all day, just working. I had to figure out how to be someone who thinks about money in an entirely different way. I had to be someone who could hire (and fire) staff once we could afford them. The list goes on, but I had to make peace with myself that I could do anything and not believe in any other option.

  • Key Ingredients for Success

SBS – What key ingredients or principles do you believe are essential for the success of a pie business, both in terms of the actual pie and the business side of things?

Rebecca – In our pie bakeries, we make every single thing from scratch. These are all my grandmother’s and great-grandmother’s recipes, so it is just like baking in your home. That’s the secret to good pie — just be completely authentic in your ingredients. We also only make pie. People call us all the time for every baked good you can possibly think of, and there are so many holes in the market where we live. Someone could just do so well here if they did cheesecake. But that someone is not us — we do just pie, and we do it at the top of our game.

  • Maintaining Quality in Peak Times

SBS – How do you manage and maintain quality across all your products, especially during peak business times?

Rebecca – One of my worries in opening a second location was maintaining the quality I thought maybe only existed because I’m really controlling in the workspace. As it turns out, it is more about putting the processes together to get the result of what you want. For example, what doesn’t sell in our stores one day is sold at half price the next day. And then we start all over, refill the shelves, and make everything from scratch.

I also train people to ask themselves if they paid for pie and got home and it looked burned, ugly, skimpy, or anything else, how would they feel about that? I would much rather our staff work to make beautiful pies than make a lot of pies that just look marginal. I always remind our staff the morning before Thanksgiving, right before we start thousands of pies, that we are honored to be a part of people’s holiday celebrations. We are a guest in their homes. We won’t make a poor showing or be a disappointment.

  • Business Tools and Resources

SBS – Are there any business tools, software, or resources that have been particularly valuable for the efficient running of Peggy Jean’s Pies?

Rebecca – I always joke that we have the most technologically advanced bakery in the United States! My husband has developed software that allows our closing team to enter inventory. That talks with the online ordering system , and then that talks with the par values I’ve established to make the perfect baking schedule. It’s catered to whether it is a Tuesday in July at our slowest time or a Saturday in early November because we’ve input the data. This allows so much success — we don’t always have to be the ones creating the daily baking schedule because we’ve removed the personal decision-making and based it solely on data.

  • Current Status and Future Outlook

SBS – How are you doing today (profitable, gross margins, etc.), and what does the future look like?

Rebecca – We are doing great! Our goal was to be a $1M company by our 10-year anniversary, and that happened in year 8. Over time, my husband left his 17-year career in healthcare to join our company, and now both of my kids are in college and work here. Obviously, I wake up at night and think about pie supporting our lifestyle and how stressful that is, especially as we battle current economic uncertainty. But can you imagine what my grandma — the creator of the original dough recipe — would say now to see her daughter, granddaughter, and great-grandchildren building a business off something she made every day? That’s pretty cool.

  • Advice for Aspiring Entrepreneurs

SBS – What advice would you give to someone looking to enter the pie or baked goods industry?

Rebecca – For someone starting out, you have to love your business like you love one of your kids. It requires all of your being — your love, your commitment, your energy, your thoughtfulness, EVERYTHING. It won’t be easy. It gets easier, but it never gets easy. You have to be committed and know that you can be the best baker in the world, but if you don’t commit to learning all the other parts of your business, you are going to struggle. You have to be able to run payroll, cover the short shifts, take the trash out, wait on customers, answer emails, and figure out your goals and growth plans. You also have to listen to your gut and not give up when the whole idea seems completely ridiculous or impossible.

Meet Thrina Low: The Heart and Soul Behind Bakery Brera's Inspiring Journey

It's hard to believe it's been five years since I first stepped into Bakery Brera & Fine Foods and had the pleasure of meeting Thrina Low. This was long before the world grappled with the outbreakof COVID-19, and my mission at the time was quite simple: find a pastry supplier for the F&B company I was working with. Bakery Brera & Fine Foods was one of the establishments on my list, and it was nestled in Empress Mall at Empress Road.

I remember the day vividly. I timed my visit just right, arriving as the bakery was nearing closing time. This fortunate timing allowed me to strike up a conversation with Thrina, who, to my surprise, had some time to spare. What was meant to be a brief visit turned into a nearly hour-long chat. Thrina's warmth and her genuine interest in hearing my stories made a profound impression on me. We found common ground and shared our own life experiences during our conversation. And, of course, I couldn't leave without picking up some of the delectable pastries to share with my colleagues.

That chance meeting marked the beginning of a meaningful connection. Over the years, I've come to deeply appreciate Thrina's strong work ethic, deeply rooted in her Christian values and her unwavering commitment to following God's path in her unique way. Even during the hustle and bustle of bakery life, she always makes time for enriching conversations.

Thrina's story deserves the Spotlight, embodying the beautiful blend of faith, work, and an unwavering dedication to helping the community.

You have a background in engineering and human resources; what inspired you to open Bakery Brera & Fine Foods, and what sets Bakery Brera apart from other bakeries in Singapore?

I'm not your typical bakery owner in Singapore. My career has taken me from eight years as an engineer to another decade as a Human Resources professional. But eight years ago, I embarked on a different journey by starting Bakery Brera & Fine Foods. This decision came at a point in my life when the corporate world had become challenging for my husband and it was after we returned from an overseas postingand I felt a deep need to do something more meaningful as I considered retirement.

During this transformative period, as much as I was reluctant to start my own business, I felt a strong calling in my heart. It was as if I had a deep sense of purpose to open a bakery that not only offered the delicious treats my family cherished but also served as a platform for helping others. Immediately I thought of using this bakery as a mission field to make a positive impact on our community.

The inspiration behind this mission was the significance of bread as a symbol of sustenance and the importance of fostering community and relationship with God.

My mission is clear:to serve the community with high-quality and health-conscious baked goods and to make a positive difference. I aim to do this through every possible means and opportunity that comes our way, embracing and living out our core values while striving to be a beacon of goodness in our community.

As someone who values community outreach or "Kampung Spirit," how does Bakery Brera actively engage with and give back to the local community?

Our Bakery Brera community has become familiar with my faith and the positivity that our artisanal boutique bakery conveys on social media. I firmly believe in "loving God and loving neighbor," and this is reflected in our online presence. Amidst images of our delicious creamy Basque burnt cheesecake, buttery croissant, and caramelized kouign amann, you'll also find earnest posts encouraging our Bakery Brera community to engage in initiatives such as the "Welcome in My Backyard" campaign. We sponsor croissants for migrant workers who've contributed to the nation, provide care packs for healthcare staff affected by Covid clusters, and collect reusable jars and containers after Chinese New Year to support the eco-forward Project bECOme.

I don't see our almost 35K Instagram followers merely as customers; they're a community I want to nurture with more than just baked goods. I aim to foster a "kampung spirit," a sense of close-knit community, which I believe even urban Singaporeans possess. I truly feel that God has entrusted me with these precious 34,500 followers, and it's a responsibility I take seriously. My goal is to take care of them faithfully, offer them uplifting content, and provide opportunities for them to make a positive impact. I firmly believe that together, through community effort, we can achieve far more than we could alone.

While I may appear at ease as a digital citizen now, it wasn't always this way. Seven years ago, when we first launched Bakery Brera, I was in a completely different place.

How do Bakery Brera and Café Brera's commitment to inclusivity, which includes hiring staff, including seniors, with special needs and mental illnesses, enhance the distinctive ambiance of the establishment and contribute to its success? Furthermore, can you elaborate on the strategies and initiatives employed to prioritize the well-being and mental health of your staff, and create a nurturing and supportive workplace environment?

Of the 45 people on our payroll, 40% are seniors. Working with seniors requires patience, as their work hours can't be as long, and sometimes instructions must be repeated. However, being an older woman at 58, I understand their challenges and respect their needs. I believe in allowing them to be themselves, to enjoy their work, and to chat. We simply need to learn to listen and slow down with them.

Some of our older employees may have limitations and specific preferences. I embrace these differences and cater to their needs, utilizing their strengths to complement the weaknesses of other workers. Even our cafe's opening hours are designed with our elderly employees in mind; we close at five to ensure they have time to rest. I cherish their wealth of experience and skills and love that they can share their wisdom and the things they enjoy.

Prioritizing the well-being and mental health of our staff is of paramount importance. We've implemented several measures to create a supportive and mindful work environment. Regular check-ins ensure that each team member feels valued and supported while offering a safe space for expressing concerns and flexible work hours.

Our approach is anchored in a culture of patience, understanding, and inclusivity. We place great importance on celebrating each person's unique strengths, ensuring that every team member feels genuinely appreciated and respected. This, in turn, contributes to the overall success and the uniquely warm and inviting atmosphere of Bakery Brera and Café Brera at Reunion (located at National Museum Singapore). I love the opportunity to be able to connect with people and to hear their stories. We want more encounters like that. It’s about connection and linking up.

How do you incorporate mindfulness practices into your daily life, and how does this influence your approach to running your bakery and cafe?

Incorporating mindfulness practices into my daily life is crucial in shaping my approach to running the bakery and cafe. I believe in the value of recognizing the abundance of blessings that surround us, often surpassing our requests. This awareness of the richness of life reinforces our reliance on a higher source of strength, wisdom, and all our needs.

The presence of Bible verses throughout the bakery serves as a consistent reminder of the core principles that guide our business. It's a visual representation of our commitment to values that extend beyond the workplace. In this mission, I take on the role of a humble servant and steward, emphasizing our dedication to these principles. We advocate and lead by example as a leading bakery in hiring inclusively, protecting the environment by reducing waste, cutting down plastics, recycling, and up-purposing all that we can, we believe in giving everyone a fair opportunity, and we aim to mentor and disciple the young.

Our journey together as a team has been marked by a deepening of our collective spirit. There have been moments when I've engaged in heartfelt conversations with my staff, particularly during challenging times, such as when they face family illnesses. These experiences provide our team with tangible examples of grace at work in our daily operations. It's through these experiences that they witness my reliance on a higher power, acknowledging my own limitations. I make it clear that we find strength in unity, a truth that guides our journey. I believe everyone is created precious, if given time, space, and proper support, everyone can flourish.

Incorporating mindfulness practices keeps me grounded in a spirit of humility and gratitude, which directly influences the way I lead and manage the bakery and cafe. This fosters an environment of respect and support for my team, promoting a sense of community and shared purpose.

Looking back at your journey with Bakery Brera and Cafe Brera, what are you most proud of accomplishing?

As I reflect back on my journey with Bakery Brera and Café Brera, what I'm most proud of is how everything fell into place according to God’s design for my life. It's clear that our life's path is deliberate, everything happens for good. My upbringing from a family who loves serving and hosting plus my corporate experience, lasting just the right number of years, was the perfect preparation for the success of Bakery Brera. Furthermore, my time in the Philippines for biblical training was a significant step in understanding the importance of serving the community.

The humble loaf of bread, a staple food for many, serves as a beautiful symbol of God's heart. It mirrors His desire to nourish, comfort, and abundantly provide for us, as emphasized in John 10:10.

My journey with Bakery Brera and Café Brera has been marked by a purposeful impact through business. Firstly, I'm grateful for the opportunity to provide employment to people in need or those who lack job opportunities. This allows us to make a positive difference in their lives and the community.

Our influence extends beyond the confines of our business. It encompasses our staff, customers, and the broader community. We have the privilege of living out our Christian values, not only in our professional roles but also in our daily lives.

Additionally, our reach indirectly touches various charities, social causes, and individuals in need, driven by a sense of purpose. This extends our capacity to make a meaningful impact beyond our immediate surroundings.

Our business provides diverse platforms for outreach, from our physical shops to our regional and even global social media presence. I find great joy in sharing our business journey on social media, where I discuss overcoming challenges and celebrating the joy that comes from life's blessings. It's a space to delve into aspects like lifestyle, daily experiences, and the role of faith as a business owner.

Furthermore, our work environment offers opportunities for coaching and discipleship. Walking alongside our team members in their professional journey allows us to go deeper into their lives and offer targeted support in a meaningful way. This has been instrumental in fostering growth and breakthroughs, especially among the younger generation within our team.

What I'm most proud of in this journey is the synergy of faith and business, where we not only find success in our work but also make a positive impact on our employees, customers, and the community, while staying true to our Christian values and principles.

Her journey into the world of artisanal baking began in February 2016, upon her return from a four-year job assignment in the Philippines, alongside her husband. In her prior professional life, Thrina worked as an engineer and held a prominent roles in the Human Resources field such as t AIA Singapore, Dresdner Bank (now Commerzbank AG), General Motors & Seagate

Fate played a pivotal role in this serendipitous foray into the bakery realm. Situated adjacent to their church, an opportunity to assume ownership of the bakery was presented by its previous owner. Thrina, a devoted artisanal bread enthusiast, recognized this as the perfect moment to embark on a new adventure. They understood that the journey ahead would not be without its challenges, but the prime location and a community that shared their passion for high-quality food made it an irresistible opportunity. With a team of skilled bakers on board, they set out to create an array of delectable treats, including the renowned cruffins.

For those acquainted with Bakery Brera, Thrina is not just the owner but also a community pillar known for her engaging conversations, support for young bakers through internships, charitable fundraisers, community exchange drop zones, and outreach initiatives such as care packages for healthcare and migrant workers.

If you plan to start a small bakery, it’s important to think about how you’ll turn your business idea into an operational success. An operational plan for a bakery business will help you determine what you need to make it run smoothly. 

An operational plan details the physical requirement of running your business. It describes how you’ll organise your business day-to-day, achieve your tasks, and earn a profit. But if you’re not sure how to write one, we can help. 

This article covers how to write an operational plan for a bakery business, including:

The first section to add to your operational plan is the bakery’s objectives . This part is essential to determining what to focus on and work towards with your business. List some short-term, medium-term, and long-term objectives. 

To make your objectives strong and manageable, use the SMART method, meaning they’ll be specific, measurable, achievable, relevant, and time-based. 

With your bakery business, short term objectives might be to source and prepare a bakery shop and design a strong website. Then, you could create a medium-term objective to sell more bakery products and develop an online shop with shipping. Long term goals could be to expand your shop to new locations or offer baking lessons or catering.  

Next, you’ll need to outline the logistics of your business. What location will you use for your business? Provide an address if you already have one, and if not, outline where you’ll open your shop and why. If you plan to start a bakery from home, outline where and how you’ll sell your goods. 

In this section, also list the operating hours of your business. Which days and what times will your shop be open to customers? You can also outline your baking hours or time spent managing your operations and finances after shop hours. 

Also, consider how the shop will run. Will you offer seating for customers, or will it be only takeaway? Will you also offer drinks or just baked goods? Will you supply your baked goods to other cafes or restaurants? 

Another essential part of your operational plan for a bakery business is outlining what you’ll physically need to run your small bakery. For example, aside from a shop with a kitchen, you’ll likely need bakery equipment like: 

  • An industrial oven  
  • An industrial refrigerator 
  • An industrial stand mixer 
  • Baking supplies and equipment (mixing bowls, measuring cups, whisks, spatulas, pans, baking trays etc.)
  • Proofing cabinets 
  • Break slicers
  • Bakery cases 
  • Plates and display trays 
  • Takeaway packaging 

Aside from sourcing the right equipment, consider what supplier you’ll use for necessary baking ingredients. These ingredients may vary depending on your recipes and the bakery goods you sell. 

But generally, you’ll likely need a food supplier for:

  • Sugar 
  • Butter 
  • Flour 
  • Yeast 
  • Bicarbonate soda 
  • Bicarbonate powder 
  • Spices 

As you outline what you’ll need, consider how you’ll manage this supply chain and organise your inventory . It’s crucial to stay on top of what you have and what you need to continue to make baked goods and meet your customer demand.

You might want to keep backups of dried goods that won’t go bad, like flour and sugar. This way, if there’s a shortage, it may not negatively impact your business. 

Another thing to include in your operational plan for a bakery business is how you’ll structure your business and organise the daily workload. In this section, think about which baked goods you’ll sell and how much you’ll charge for them. Also, outline how you’ll accept payment from customers and manage your shop and baking needs. 

Next, outline what it’ll cost to produce your baked goods and run your business overall. Consider each part of your operations and much money it’ll need. 

First, think about startup costs, essential expenses to getting your business running. These costs could include necessary equipment, registration fees, marketing, and website building. 

Then, you might outline the rent, electricity, water, and wifi charges of running your shop. Also, calculate the cost of your ingredient orders and how often you’ll need to restock. 

Once you know the money you’ll need, consider how you’ll get it. So, you might include your plan to secure funding through an investor or lender. 

On top of this, you’ll need to consider your financial accounting methods. It’s crucial to maintain accurate business records, which you can do by opening a business current account and using modern accounting software, like Countingup.

Levels of Certification

Certification levels, certified journey baker (cjb).

A baker at this level assists in the preparation and production of pies, cookies, cakes, breads, rolls, desserts or other baked goods for a commercial bakery. Duties may include stocking ingredients, preparing and cleaning equipment; measuring ingredients, mixing, scaling, forming, proofing, oven tending, and product finishing. He/she must demonstrate a basic knowledge about the principles of sanitation.

Qualifying Criteria

  • Education : no mandatory requirement.
  • Baker Requirements & Work Experience : a minimum of one year (2,000 hours) of verifiable commercial/retail baking experience, or a minimum of one year combination of education and commercial/retail baking work experience of which at least 1,000 hours must be work experience.
  • Written Test : achieve a passing score of 75%.

Certified Journey Decorator (CJD)

A decorator at this level assists in the preparation and production of pies, cookies, cakes, breads, rolls, desserts or other baked goods for a commercial bakery. Duties may include stocking ingredients, preparing and cleaning equipment; measuring ingredients, mixing, scaling, forming, proofing, oven tending, and product finishing. He/she must demonstrate a basic knowledge about the principles of sanitation.

  • Written Test & Video Submission : achieve a passing score of 75%.

Certified Baker (CB)

A Certified Baker prepares and produces baked goods while assisting with general commercial bakery operations. He/she has considerable responsibility and autonomy and participates in a broad range of both complex and routine work activities, including supervision of other staff and allocation of resources. He/she must demonstrate a basic knowledge of bakery sanitation, management, retail sales/merchandising and staff training.

  • Education : must have a verification of the Serv-Safe certification or the completion of a 30-hour sanitation course offered by a school, government agency or association.
  • Baker Requirements & Work Experience : a minimum of four years of verifiable full-time commercial baker/retail baking experience, or a CJB plus three years of verifiable full-time commercial/retail baking experience.
  • Practical Test : achieve a passing score of 75% for a one-day practical test administered by RBA.

Certified Decorator (CD)

A decorator at this level and for this designation prepares and finishes sweet baked goods for a commercial bakery. Duties include preparing icings, decorating a variety of cakes using various techniques, seasonal displays and specialty designs, and working with customers. He/she demonstrates a basic knowledge about sanitation.

  • Education : must have a verification of the Serv-Safe certification or the completion of a 30-hour sanitation course offered by a school, government agency or association.
  • Baker Requirments & Work Experience : a minimum of four years of verifiable decorating experience working in a commercial/retail bakery or a CJD plus three years of verifiable full-time commercial bakery/retail baking experience.

Certified Master Baker (CMB)

A baker at this level and for this designation participates in a broad range of complex, technical or professional work activities, performed in a wide variety of contexts with a substantial degree of personal responsibility and autonomy. Responsibility for the work of others and allocation of resources is present. He/she must have the technical and administrative skills necessary to operate and manage the production area of a full-line independent or in-store commercial bakery. He/she must produce high quality bakery foods, and demonstrate a basic knowledge about the principles of sanitation, management, retail sales/merchandising and training.

  • Education : must have verification of the Serv-Safe certification or the completion of a sanitation course offered by a school, government agency or association. The CMB also requires a total of 30 contact hours of professional development courses/seminars or workshops in supervision (focused on human relations, team work, and supervision) or bakery management and production. Candidates must submit a portfolio of her/his work.
  • Baker Requirements & Work Experience : all candidates must have achieved a Certified Baker (CB) designation plus have a minimum of an additional three years (36 months) of verifiable full-time commercial/retail baking experience, or over ten years of verifiable full-time commercial/retail baking experience without a Certified Baker designation.
  • Practical Test : achieve a passing score of 75% for a two-day practical test administered by RBA.

Professional Development and Continuing Education Requirement

Candidates may fulfill the professional development or continuing education requirement in many ways. RBA recognizes formal (educational institution based) and informal (seminars, workshops, distance learning) educational experiences as well as trade shows and affiliate programs.

1 Continuing Education Unit (CEU) would equal 10 contact hours for any program offering CEUs.

RBA’s BakeryX is a Student Certification and Career Launch Program that works with RBA member and non-member trade schools, community colleges and universities to provide their baking & pastry students with the opportunity to become certified as a Certified Journey Baker at a reduced rate of $50 per student (member rate) or $75 per student (non-member rate).

Upon successfully passing the CJB, the student will receive a complimentary year-long individual RBA membership.

The Journeyman Baker and Journeyman Decorator levels of certification are completed online, giving students the opportunity to complete them in the classroom or from home.

How Customer Journey Mapping Helped a Small Bakery Grow their Business by 30%

First, let’s define what we mean by “customer journey mapping.” Essentially, it’s a way of understanding the path that a customer takes before they make a purchase from your business. By mapping out the different stages of the customer journey, you can identify areas where you can improve the customer experience and make it more likely that they’ll buy from you.

As customer journey mapping is such an important part for any business, I felt it would be good to mention a small online bakery owned by John who reached out to us, and how we used customer journey mapping to take his business to the next level.

John’s bakery had been around for quite a few years, and you know – it was doing okay, but they knew they could be doing better – they were struggling to understand their customers and what they wanted. Sometimes it’s easy to blame the product and not realise that the product is perfect – it’s just a few that knew that that’s why we recommended using customer journey mapping to find the issue.

So, we started by mapping out the different stages of their customers. We quickly discovered that many of their customers first became aware of the bakery through social media and especially word of mouth – which is a great start; however, this meant that the customer had to research local bakeries before deciding to try them; saying that – they had quite a few leaving positive reviews, but quite hidden on the Facebook page.

We researched the different local bakeries as part of the mapping process and identified areas of improvements that could be brought onboard. By doing this we notice that many of his customers were having trouble finding detailed information about his products – especially on their website. We realised that the owner wasn’t doing much to encourage repeat business or customer loyalty.

To solve this specific problem, we decided to create a detailed product page for each item on his website. We also added customer reviews and featured products section to help customers make informed decisions. Additionally, we started sending out thank you emails and surveys after each purchase to get feedback from his customers – encouraging them to come back. Obviously – surveys came with incentives in the form of discounts or gifts.

It’s thanks to the customer journey mapping that we were able to identify areas of improvements and make changes to their business, which in turn helped them grow. By just providing detailed information about their products and encouraging customer loyalty – this attracted new customers and retain existing ones and helped then grow their business faster and more effectively. In fact, Johns online bakery saw a 30% increase in sales within the first six months of implementing these changes. There were various other changes that we recommended for his business but being that this small change made such a large difference – their story is a perfect example of how customer journey mapping can help you grow your business. This process can be used for any company no matter what you’re selling or size.

Whether you’re a clothing store, software company, or even an online bakery, you can use this to understand customers better and make more informed decisions about how to grow your business.

I recommend that you start by mapping out the different stages of customer journeys for your business. Take notes of where customers are becoming aware of your products and where they are running into trouble during the buying process.

Now, let’s talk about the different stages: Generally, there are four stages: awareness, consideration, purchase, and post-purchase.

Stage 1: Awareness During the awareness stage, customers are just starting to research different products or services. They are now discovering what might be a good product for them, and this is where it’s a great opportunity for any business to create content that actually educates the customers about their products and why they can differentiate them from their competitors.

Stage 2: Consideration We now must think about the consideration stage. The potential customer is now narrowing down their decision on what product they want to buy. This is the opportunity for the business to provide further details information about that specific product, which should include specifications and add any reviews it may have; helping the customer make an informed decision.

Stage 3: Purchase The customer has now decided to make the purchase on the efforts the business has placed onto that product. So, congratulations – they just made a sale.

Stage 4: Post-Purchase Finally, there’s the post-purchase stage. This is where businesses can encourage customer loyalty and repeat business. This can be done through follow-up communication, such as thank you emails or surveys, and by providing excellent customer service.

By mapping out the customer journey and identifying the areas for improvement, businesses can make better-informed decisions about their specific marketing and sales strategies. Having this knowledge can really expediate the growth of a business in a more effective manner, giving them the competitive edge over other eCommerce sites.

Remember, customer journey mapping is a powerful tool that can help you grow your business and understand your customers better.

The History of Ideation:

Ideation operates in two facilities located 17 miles apart in Marietta and Atlanta, Georgia. They have a dedicated gluten facility and dedicated gluten free facility. They specialize in contract manufacturing of gluten free, allergen free, keto, and better-for-you bakery products.

Utilizing FlexiBake:

FlexiBake eased the shift to co-manufacturing, benefiting the business and their clients. Allowing Ideation to readily access metrics such as raw material usage, waste generated, quantity produced, finished goods and finished inventory levels. This data enables them to plan and optimize the next production run effectively. Pricing, inventory management, and other critical aspects of their operations are now handled seamlessly by FlexiBake. Gone are the days of manual, labor-intensive processes where everyone had to scramble to gather information. “The upfront effort invested in the setup has paid off tremendously.”

Now, Ideation can easily gather all the data needed on a daily basis. This is a stark contrast to the painstaking processes previously used. This time savings has allowed them to shift focus to more critical, detailed aspects of their operations. Tasks that once took days, such as physically searching the warehouse for inventory or creating order guides in Excel, can now be completed in just one hour. This transformation has liberated valuable time for more in-depth and strategic work.

This is a decision that has greatly impacted their business for the better – “I can access FlexiBake from anywhere in the world.  All I need is an internet connection. I’ve loaded it onto iPads, so people in our company have instant access to not only inventory, lot codes and numbers for traceability, but they also are able to report on so much information while they’re standing in the warehouse.”  During COVID this was a game changer to help adhere to social distancing protocols.

Choosing a cloud-based deployment offered Ideation flexibility, data security, and quick access to support, ultimately enhancing their peace of mind and operational efficiency. “I find the thing that I really like is when we need assistance, your support team is able to jump in straight away.”

Using most features such as purchasing, receiving, sales, production, multiple warehouses and more. “ We use the software across 2 sites seamlessly and I would not be hesitant to add more and more in the future.”

When asked what advice they would offer to other bakery owners considering FlexiBake to enhance their bakery operations, they said “First of all, it has to be top-down approach. It can’t be anyone other than whoever’s at the very top saying we need to do this. If you’re going to pay for it, use it. And don’t expect it to be something it’s not.
